Use Instead of Charcoal for Fuel & Flavor: Stack dry cooking chunks in a charcoal chimney and light it using paper or a solid fire starter. Once flame reaches the top and the chunks begin to ash over, carefully pour them into the grill. Or, place them directly in the grill in a pyramid shape on a solid fire starter, light it, and let the chunks burn down and ash over. Once the coals are ready, close the vents and lid, and wait about one minute for the flames to subside. Then, open the lid and spread chunks evenly. Place food on the grill and close the lid. Cooking with the lid closed prevents flares and allows the wood to give better smoke flavor to the foods cooked. Use with Charcoal to Add Smoke Flavor: Light the charcoal using your preferred method. Several minutes prior to cooking, add 3-5 dry chunks on a standard grill. Add more for large smokers. Continue to add chunks every 20-30 minutes during the cooking process to infuse that great smoke flavor. Tips and Techniques: To retain the natural flavor, we recommend building your fire without lighter fluid. Instead, use a charcoal chimney and/or a solid fire starter. Watch for flare-ups. Control by closing air vents until flames go out, then adjust to desired heat level. Vents open, more heat. Vents closed, less heat. Natural wood burns hotter than charcoal briquets, so be careful not to overcook. All of our wood is heat treated to a minimum interior temperature of 71 degrees C for at least 75 minutes. Heat treatment eliminates pests and prevents mold. Easy to close box. Close adjacent flaps first. Then fold this flap down and into grooves.
